Guaranteed Rate Field's BBQ Plate

Everyone has been missing their favorite foods from the ballpark this season, but now thanks to Stella Artois, baseball fans can savor these stadium bites together from home. Stella‘s “A Cut Above” cooking series teaches fans how to recreate the recipes with an elevated twist. Next up in the series is BBQ Plate, inspired by the dish at Guaranteed Rate Field in Chicago. Enjoy it socially distanced with your favorite baseball fans.

BBQ Plate
Serves 4
Total Time: 6 hours

Ingredients
• Brisket
3 lb brisket, trimmed
3/4 cup brisket cure (recipe follows)

• BBQ Pulled Pork
3 lb boneless pork butt
3/4 cup BBQ rub (recipes follows)
1 cup BBQ sauce

• Baked Beans
1 can small white beans
1/2 cup yellow onion, diced
1 tbsp garlic, minced
1/4 cup slab bacon, diced
2 tbsp maple syrup
1/4 cup cider vinegar

• 4 Cheese Mac & Cheese
8 oz elbow or shell pasta
1/2 cup yellow onion, diced
1 tbsp garlic, minced
1/2 cup butter, divided in 2
1/4 cup flour
2 cups heavy cream
1 cup milk
1/4 cup Parmesan, grated
1/2 cup Gouda, grated
1/2 cup Cheddar, grated
1/4 cup cream cheese
1 tbsp Kosher salt
1/4 cup panko breadcrumb
2 tbsp parsley, chopped
1/2 tsp Kosher salt

• Spicy Slaw
1 cup red cabbage, sliced thin
1 cup green cabbage, sliced thin
1/2 cup red onion, sliced thin
1/2 cup carrot, grated
1/2 cup red pepper, sliced thin
1 jalapeno, seeded and sliced thin
1 tbsp celery seed
2 tbsp cider vinegar
1/4 cup mayo
2 tbsp hot sauce
1 tbsp Kosher salt

Directions
• Brisket:

  1. Mix together all cure ingredients. Rub all over brisket and place in sealed container or plastic bag. Cure for at least 12 hours.
  1. Preheat oven to 300F. Place brisket on baking dish or tray, cover with foil and roast in the oven for 4 hours.
  1. Turn oven up to 375, remove foil and roast for another 30 min. Cool and slice.

• BBQ Pulled Pork

  1. Mix together BBQ rub ingredients. Rub the pork butt with the cure and place in sealed container or plastic bag. Cure for at least 12 hours.
  1. Preheat oven to 300F. Place pork on baking dish or small oven-safe pot. Add BBQ sauce, 1 cup water and cover with lid or foil. Roast in the oven for 3-4 hours until tender. Remove from oven and cool until able to handle. Remove pork from liquid and shred with forks. Mix the pork back in with the liquid and add more BBQ sauce to your liking.

• Baked Beans

  1. Heat a large heavy bottomed pot or saute pan over medium-low heat. Add butter and bacon, begin to brown. After 3-4 minutes, add onion and garlic, cook for 5 minutes, stirring occasionally.
  1. Add white beans, BBQ sauce maple syrup and cider vinegar. Mixing well. Simmer for 8-10 minutes until sauce has thickened.

• 4 Cheese Mac & Cheese

  1. Preheat oven to 350F.
  1. Heat a large pot over medium heat. Melt butter and add onion and garlic. Cook for 4-5 minutes, stirring occasionally.
  1. Add flour and mix well to incorporate with the butter. Cook for 2-3 minutes until a golden blond color has formed.
  1. While the roux is cooking, fill a large pot with water and season with salt. Heat over high heat until boiling. Add the pasta and cook according to package instructions. Once cooked, drain the pasta but save 1-2 cups of the pasta water.
  1. In a separate pot, mix the milk and heavy cream and place over medium heat to warm.
  1. Add the warm milk mixture to the flour and butter mixture whisking well and turning the heat up to medium. Once the mixture looks smooth, add the cream cheese and whisk well.
  1. Add the cheeses one at a time, whisking constantly to melt slowly and fully incorporate. Once melted, remove from heat and season with salt.
  1. Mix the cheese into the warm pasta, adding pasta water as needed if the sauce starts to thicken.
  1. Place in a baking dish and set aside.
  1. Heat a small skillet over medium heat. Add butter to the skillet and begin to melt. Once melted, add the breadcrumbs and stir or toss frequently until the breadcrumbs begin to brown. Once brown, remove from heat, place in a cool bowl and mix in parsley and salt.
  1. Top the pasta and cheese generously with breadcrumbs and place in oven for 10 minutes. Remove and serve.

• Spicy Slaw

  1. In a large bowl, mix cabbage, carrot, pepper, onion and jalapeno. Season with salt and toss well.
  1. In a small bowl mix together mayo, hot sauce, cider vinegar and celery seed.
  1. Toss the slaw mix with the spicy dressing and let marinate for at least 20 minutes.

• Brisket Cure
Yield ¾ cup

6 tbsp Kosher salt
2 tbsp brown sugar
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp ground coriander
2 bay leaves, roughly torn
1 tbsp black pepper, ground or cracked

• BBQ Rub
Yield About 1 Cup

4 tbsp Kosher salt
2 tbsp brown sugar
2 tbsp chili powder
2 tbsp paprika
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp ground cumin
1 tbsp ground coriander
1/2 tbsp cayenne
